Meg went on a camping + climbing trip and requested that I make her beloved Filipino spaghetti, which we call “hot dog spaghetti.” With dehydrated meats, it’s important to use the leanest meat possible, and do not add cooking oil. Fat and oil don’t dehydrate properly and can spoil your dehydrated food. Hot dogs honestly did not dehydrate super well because of their high fat content, but because Meg was eating this meal within a couple of days of dehydrating, it was fine! I would not store this meal long term, though. THE RECIPE 4 hot dogs, thinly sliced on a bias 1 small onion, diced 4 cloves garlic, minced 1 lb lean ground beef (93-96%) 6oz tomato paste 1 cup banana ketchup 2 tbs brown sugar 15oz tomato sauce 2 cup beef broth 2 tbsp soy sauce 1 tbsp fish sauce 16oz spaghetti Cook the hot dogs in a non-stick pan, then set aside. Cook the onion & beef in the same pan until beef is browned. If there is excess fat, blot the fat from the beef with a paper towel. Add tomato paste and cook for 2 minutes. Add tomato sauce, ketchup, brown sugar, beef broth, soy sauce, and fish sauce. Bring to a simmer. Meanwhile, cook spaghetti (break the noodles in half - it’s easier to dehydrate and store). Add cooked noodles to the sauce and toss to combine. Place the noodles on a parchment-lined dehydrator tray (you may need to do this in 2 batches). Layers should be thin for best results. Dehydrate at 155ºF for 10-12 hours until completely dry. The hot dog pieces might still be a little rubber-y - not great for long term storage, but OK if stored in airtight container, refrigerated for a few days. #campingmeal #camping #campkitchen #cooking #recipe
