Every kitchen needs a large cast iron skillet/pan- great heat retention and adds tons of flavor. My flour tortilla recipe in case you want it: Buttery Flour Tortillas Recipe Mix in one bowl: 3 cups flour 2 tbsp baking powder Melt together 1 cup distilled water 1/2 cup salted butter Once water and butter are mixed, pour into dry ingredients while still warm Mix and knead until a smooth ball Cover with plastic for 15-30 minutes Separate dough into small balls- try to be as uniform as possible- and roll into balls Put dough balls back into bowl and cover with plastic for at least 10 minutes. (I’ve been distracted and left them for over an hour and they’ve been fine. Heat up cast iron skillet on low medium heat (in between 4 and 5 on my stove that goes up to 10.) Cast iron holds heat really well so ma not need it as high a temp as you would for other pans. (Tip on heat- too low and the tortilla will be doughy and not rollable. Too high and it’ll burn the bubble spaces before the rest is done.) Lightly flour work space and roll out balls. (Tip- roll one direction, the flip the dough and roll the other direction. Continue until have round dough that is almost see through- but don’t tear) Place tortilla on preheated pan- watch for bubbles- when most of the side has bubbles, flip. Cook for at least 30 seconds on new side. Can flip again to check for doneness. You should see brown spots on both sides, but the dough should still be foldable when you pick it up.
