Chef teaches you how to make Maple Bourbon Brisket with Burnt Ends, Parsnip Purée & Roasted Brussels Sprouts 🍁 INGREDIENTS Brisket - 1 whole (15–18 lb) packer brisket, trimmed - 1 cup Duce’s Wild Original Rub - 2 tbsp Duce’s Wild Original Mustard (binder) - ¼ cup maple syrup (Grade A dark amber) - ¼ cup bourbon (Woodford Reserve, Buffalo Trace, etc.) - Peach butcher paper Maple Bourbon Glaze - 1 cup maple syrup - ½ cup bourbon - 2 tbsp brown sugar - 1 tbsp Boss Blend - 1 tbsp butter - 1 tbsp fresh parsley (chopped, added off heat) Parsnip Purée - 2 lb parsnips, peeled & chunked - 2 cups chicken stock - ½ cup heavy cream - 2 tbsp butter - 1 tbsp maple syrup - Salt & white pepper to taste Roasted Brussels Sprouts - 2 lb Brussels sprouts, halved - 2 tbsp olive oil - 2 tbsp maple syrup - 1 tbsp balsamic vinegar -Salt & pepper to taste METHOD Prep & Season 1. Trim brisket leaving ¼-inch fat cap. 2. Rub lightly with Duce’s Mustard binder. 3. Coat generously with Duce’s Wild Original Rub. 4. Rest at room temp 30–45 min while smoker heats to 250°F. Smoke 5. Smoke at 250°F using hickory or oak. 6. Cook ~8 hours or until internal temp hits 165°F and bark is set. Wrap 7. Place on butcher paper. 8. Drizzle ¼ cup maple syrup + ¼ cup bourbon over the top. 9. Wrap tight and return to smoker until 200°F internal. Rest 10. Rest 1–2 hours minimum (3–4 for best results). Make the Glaze 11. Combine maple syrup, bourbon, brown sugar, butter, and Boss Blend in a pan. 12. Simmer until the bourbon cooks off and the mixture reduces by half. 13. Remove from heat and stir in parsley. Finish & Serve 14. Separate point and flat. 15. Cube the point into 1½-inch pieces; toss with ½ cup glaze. 16. Return burnt ends to smoker at 325°F for 15–20 min until caramelized. 17. Slice flat across the grain; brush with warm glaze before serving. Sides 18. Parsnip Purée: Simmer parsnips in stock until soft (~15 min), then blend with cream, butter, maple syrup, salt & pepper until smooth. 19. Chef teaches you how to smoke a turkey that’s packed with flavor 🍗 We used the @thermopro TempSpike probes to monitor the perfect cooking temperatures for each part of the turkey! EQUIPMENT - Weber Searwood Grill - Royal Oak Hickory & 100% Charcoal Pellets - ThermoPro TempSpike Dual Probes - Cutting board, kitchen shears, foil INGREDIENTS - 1 gallon water - 1 cup kosher salt - 1 large onion, sliced - 2 oranges, sliced - 2 lemons, sliced - 4 sprigs fresh thyme - 4 bay leaves - 1 whole turkey (12–14 lbs) - ½ cup mayonnaise (binder) - Duce’s Wild Poultry Rub INSTRUCTIONS Break Down the Bird: 1. Separate the leg quarters and breast so each can cook to its ideal temp. This lets you pull the breast off at 165°F for perfect juiciness, while leaving the dark meat on the grill until it hits 185°F for tender, pull-apart perfection. Brine the Turkey (12–24 hours): 2. In a large pot, combine brine ingredients and bring to a simmer to dissolve the salt. Cool completely, then submerge turkey pieces. Brine overnight in the fridge. Dry, Bind, and Season: 3. Remove the turkey from the brine and pat dry. 4. Rub a thin layer of mayonnaise over all surfaces (binder). 5. Season generously with Duce’s Wild Poultry Rub — under the skin and on all sides. Set Up the Weber Searwood: 6. Load the hopper with Royal Oak Hickory & 100% Charcoal Pellets. 7. Set temperature to 275°F and engage Smoke Boost for that clean, wood-fired flavor. Smoke and Monitor: 8. Place the breast in the cooler zone and the legs/thighs closer to the hotter zone. 9. Insert the ThermoPro TempSpike probes — one in the breast, one in the thigh. 10. Smoke until the breast hits 165°F, then remove and tent with foil. 11. Continue smoking the leg quarters until 185°F internal. Rest and Serve: 12.
